The ingredients you will need

This is a recipe for how to make a Moes stack at home.

Ingredients:

  • Breakfast sausage
  • Bacon
  • Eggs
  • Pancake batter

Directions

  1. Cook your bacon and sausage. You will want to cook the bacon on medium heat until it is crispy and the sausage until it is browned. If you are cooking with low quality meats, add oil to the pan so that it does not stick as much. Do not use olive oil, as it only has a low smoking point and will burn during cooking. If you do not own a pan, you can always just microwave the meat for 3-4 minutes each in separate bowls. Make sure to break up any large chunks of the meat so that it cooks evenly.
  2. Cook your eggs. You can either scramble or fry your eggs, depending on your preference, but I prefer to fry mine because I like runny yolks and scrambled eggs do not have yolks as they are beaten into the egg whites before cooking. Season with salt and pepper while cooking. If you are using bacon grease instead of butter to cook them in, add some butter anyway so that they don’t taste too greasy.

Add guacamole

Now, let’s get to the recipe. It’s so simple and easy to make, it doesn’t even require a recipe. Just follow along!

  • I start with some starchy refried beans. You can buy them canned (BUSHs are my favorite), or you can make your own.
  • Add them to a bowl and spread them out in an even layer. I like to heat up my refried beans in the microwave or on the stove just until warmed through. They’re not necessarily hot though, just warm enough that they spread easily.
  • Next, add some grated cheese on top of the refried beans. I used cheddar here because it’s what Moe uses, but feel free to experiment with other types of cheese like Oaxaca, queso fresco, pepper jack, or Mexican blend cheese.
  • Then comes the meat! For this step, you have two options: ground beef or shredded chicken. I think both options are great, and I like to mix it up every now and then by using both!
  • Add some salsa to the top of your stack (I used a tomato-based salsa here). If you want some extra spice, use a green salsa.

How to get it right the first time

Ingredients

  • 1 tsp. sugar
  • 1 tsp. baking soda
  • 1/2 cup sour cream or plain yogurt
  • 3 eggs, lightly beaten
  • 1 cup milk
  • 1/2 cup all-purpose flour
  • 2 Tbsp. butter, melted and cooled slightly, plus a little more for frying and serving (optional)

Directions

  • In a small bowl, combine the sugar and baking soda. Set aside. In another bowl, whisk together the sour cream, eggs, milk and butter.
  • Add the dry ingredients to the wet ingredients and mix well with a fork until there are no lumps remaining in the batter.
  • Let sit for 20 minutes before using.
  • When ready to make the pancakes, heat a large non-stick pan or griddle over medium heat until hot enough that water droplets evaporated quickly on contact with the surface of the pan.
  • Lightly brush griddle with oil or butter. Working with about 1/4 cup of batter per pancake, ladle batter onto heated griddle in 3-inch rounds (you can make a few smaller pancakes instead).
  • Cook until bubbles form on top of the pancakes, they begin to set around edges, and bottoms are golden brown around edges (about 2 minutes). Flip pancakes and cook until undersides are golden brown

Conclusion

The key to a great moes stack is the cream cheese and peanut butter which are spread on top of one another. The way these ingredients are combined helps the two items become more cohesive, and this allows it to move less and hold different shapes when placed on the sandwich, adding to the overall effect.
