Cook potatoes in tallow until browned
Home fries are a simple recipe that can be done in many different ways. Some people like to leave the skin on the potato, and some do not. They can be made with white potatoes, or with sweet potatoes. You can use whole potatoes, or you can get fancy and make them into little cubes.
You’re welcome to make your home fries any way you like. I’m going to show you how I like to make them because they’re delicious, and they’re fun to eat.
The first thing you need is a good quality cooking fat. I prefer tallow, which is rendered beef fat from grass fed cows. Beef tallow is a perfect fat for high temperature cooking because it has a very high smoke point of about 400 degrees Fahrenheit. It also adds great flavor to the potatoes and makes them nice and crispy on the outside, but soft and fluffy on the inside.
There’s another reason why I like using tallow for my home fries: it’s cheap! You can get it from any butcher shop for just a few dollars per pound. If you have access to grass fed beef, then you can render your own at home by slowly heating up some cubes of meat in a pot of water over low heat until the fat renders out and separates from

Add the rest of the spices, mixing well with the potatoes
1. Place the potatoes in a large pot, cover with water and bring to a boil over high heat. Reduce the heat to medium-low and simmer until the potatoes are just tender, about 15 minutes. Drain and let cool slightly.
2. Meanwhile, in a large skillet, heat the oil over medium-high heat until shimmering. Add the onions and season with salt and pepper; cook until translucent, about 2 minutes. Add the garlic and cook for 30 seconds more. Remove from the heat and set aside.
3. Coarsely chop the potatoes, place them in a large bowl and add half of the onions and garlic mixture along with 1 1/2 teaspoons of salt, 1 teaspoon of pepper and all of the sazon seasoning; toss to combine well. Add the rest of the spices, mixing well with the potatoes.
4. Wipe out the skillet with a paper towel then return it to medium-high heat with some vegetable oil (just enough to coat the bottom). When hot add half of the potato mixture; using a spatula press down on it so that it’s flat like a pancake in an even layer over the entire surface of your skillet (it should be about 1/2-inch thick).
